Crafting premium spirits is both an art and a science. Rainfall Distillery’s Master Distiller combines the two seamlessly, using a custom-built 16-plate Reflux Column Still combined with various innovative extraction, steeping and smoking techniques to create each artisan spirit from start to finish.

Many distilleries draw from boreholes, mains/public supplies, or other local water sources, but the source varies widely by distillery and region. Rainfall Distillery uses natural rainwater harvested on the estate in the Southern Forests of Western Australia instead.
Rainwater is naturally soft and low in dissolved minerals, which means it arrives at the still without the treatment variables common to town water.
The result is a base that lets the botanicals and infusions speak for themselves, rather than competing with the water they’re made with
The southwest corner of Western Australia is one of Australia’s most botanically diverse regions and a globally recognised biodiversity hotspot, with many native species found nowhere else. The Southern Forests sit within this region, where karri and marri forests, a temperate climate, and high rainfall create growing conditions that are unusual in Australian agriculture. The region’s native botanicals and locally grown fruit, grape and citrus varieties help shape Rainfall’s expressions.
Most gins are built from a neutral base spirit, botanicals sourced from different places, and water from the local supply. Rainfall Distillery’s single-estate approach focuses on place, using rainwater captured on the Ampersand Estates property, botanicals grown in the distillery garden, and grapes from the estate’s vines. The result is a spirit shaped by one site and, in a broader sense, by one season.
The signature expression is built around Western Australian Southern Forests scarlet bottlebrush, which lends a distinctly herbaceous character, alongside juniper, native pepperberry, heirloom citrus and rosemary. Everything is distilled with pure rainwater harvested on the estate, giving the gin a strong sense of provenance from the Pemberton region.
The range extends from there: Southern Forest cherries, Pinot Noir and strawberries (combined in one expression), and Karri-smoked fortified wine each anchor a separate gin, giving the broader Rainfall lineup a strong sense of place across every bottle.
A fully single-estate gin, with every botanical grown onsite in the Rainfall Distillery Gardens, is planned to launch alongside the maturation of the gardens as part of Australia’s first single-estate, closed-loop spirits program.
Yes. The Terroir Tasting Experience is an intimate, day visit at Ampersand Estates in Pemberton, Western Australia. Set within the ancient karri forest of the Southern Forests, the experience takes you through the estate’s Chardonnay vineyard and Rainfall Distillery Gardens before a private, seated tasting of our award-winning cool-climate wines alongside Rainfall gin and vodka, distilled entirely from estate-grown botanicals and harvested rainwater. A substantial grazing selection of local and estate-produced produce accompanies the tasting and is designed to function as a refined lunch.
Throughout the visit, foraging, storytelling and tasting come together to explore how the Southern Forests landscape translates directly into flavour. Priced at $180 per person, the experience is available for day visitors and runs as an intimate, small-group format.
